There are those recipes that you just really think won't be able to be made vegan. But alas I got this recipe from Nora Cooks and it turned out incredible. The only change I made was using the Trader Joe's vegan brioche and frying in a cast iron skillet. Let's get into it.
INGREDIENTS
- 1 cup Oat Milk, or any plant-based milk of your choice
- ¼ cup Cornstarch
- 1 tsp. Ground Flaxseed
- ½ tsp. Baking Powder
- 1 tsp. Ground Cinnamon
- 2 tsp. Maple Syrup
- 1 tsp. Vanilla Extract
- 6-8 slices of Vegan Brioche
- 2-3 tbs. Vegan Butter, for frying
INSTRUCTIONS
In a shallow bowl, wide enough to hold a piece of your bread, whisk together the plant-based milk, cornstarch, ground flaxseeds, baking powder, cinnamon, maple syrup, and vanilla.
In a large pan over medium-high heat melt some of your vegan butter. Whisk the batter again right before dipping the bread, as the cornstarch can settle.
Dip each side of the bread in the batter and let soak for about 10 seconds, then add the bread to the pan and cook for 2-3 minutes on each side, until golden brown. Add more vegan butter/oil to the pan as needed in between pieces of bread.
Top with maple syrup, powdered sugar, or fresh fruit!

I honestly don't even eat french toast very often but I would absolutely pick up the Trader Joe's vegan brioche more often just for this recipe. It also is a really easy and quick breakfast recipe.
