6 INGREDIENT ROASTED TOMATILLO SALSA


This salsa is my go-to recipe! Has just enough kick and is simple enough to make quickly.


Let’s get right into it!


INGREDIENTS

- 5 Jalapeños

- 15 Tomatillos

- 1 tbs. Olive Oil, to drizzle

- ¼ cup Lemon or Lime Juice

- ½ cup Cilantro

- Salt to taste

INSTRUCTIONS
  1. First, preheat your oven to 425 degrees F.

  2. Next, peel the leaves off your tomatillos and rinse. Also, rinse your jalapenos

  3. Line a baking sheet with foil. Place all the tomatillos and jalapenos on the sheet and drizzle the olive oil over top. Sprinkle some salt and bake for about 25 minutes. You want to bake them until they get a nice blackened exterior. Not burnt just good color.

  4. You can broil them as well if you don't see the color developing. Also, you can grill these to achieve similar results.

  5. Let them cool so you can pull the seeds out of the jalapeno. You can do this beforehand as well but they come right out when you do it in this stage.

  6. Throw them all into the blender with the cilantro, and lime/lemon juice, and add salt for taste!

I personally love the flavor of lime > lemon but it's totally up to you! Both work and taste great.

Boom, a tasty, a little spicy, and perfect for any dish salsa.


It’s not super watery and it's not too thick!


I throw this on top of my eggs in the morning, breakfast burritos, tacos, you name it! It’s perfect to keep in the fridge.
