CRAB CEVICHE


If you guys are reading this as I am posting it, I want to say I hope you guys are safe and doing your part! This is a crazy time but if you stay calm and prepare yourself with the necessary resources and facts, it’s a lot less scary.


This recipe is so so easy and really delicious and filling. It doesn’t feel heavy at all either. This is a lot like my regular ceviche recipe but with imitation crab instead!

INGREDIENTS

- 1 lb. Imitation Crab Meat

- 2 Lemons

- 3 Tomatoes, diced

- 3 Jalapeños

- ½ bushel of Cilantro, chopped

- Salt, to taste

- Cucumber, diced and peeled

- 2 Avocados

- Tostadas

- Mayonnaise

- Hot Sauce


INSTRUCTIONS
  1. First, you want to begin by shredding the crab meat in a large bowl.

  2. Dice your jalapenos and tomatoes into small enough pieces to bite.

  3. Chop your cilantro and add all the ingredients to the crab.

  4. Pour the lemon juice over everything and mix all the ingredients together.

  5. Add salt to taste and let it set in the fridge for an hour or more. Typically the longer you let the ingredients set, they combine and get stronger!

  6. Boom! You're ready to enjoy it on a tostada with all the toppings and fix-ins.

Boom! Your crab ceviche is done. It’s so good and really a quick recipe to prepare. Something that tastes even better the next day!


Grab a tostada, apply a thin layer of mayo then ceviche. Next toppings are optional but like not really haha. I put avocado, cucumber, Cholula, and an extra sprinkle of salt.
