VEGAN BLONDIES

This recipe came about because my dear friend Brittany is moving to Amsterdam! We're having a last hurrah before she leaves for good and I thought it would be fun to make some dessert to snack on while we spend time together.


It's a perfect dessert for gatherings because you can make them bite size, or big bites, whatever the occasion calls for. They also are not any more complicated than making a batch of cookies and for that I love them even more!


These vegan blondies are ooey-gooey, and so perfect for a quick dessert to whip together.


INGREDIENTS

1 tbs. Flaxseed

3 tbs. Water

1 cup All Purpose Flour

½ tsp. Baking Soda

¼ tsp. Salt

6 tbs. Vegan Butter, softened

¼ cup Granulated Sugar

6 tbs. Brown Sugar

1 tsp. Vanilla Extract

1 cup Chocolate Chips, vegan


INSTRUCTIONS
  1. Prepare your flax egg by combining the flaxseed and water into a small bowl and set aside until it has thickened, about 10 minutes.

  2. Preheat the oven to 350 degrees F and line an 8x8 inch pan lined with parchment paper.

  3. In a large mixing bowl, add flour, baking soda, salt and whisk until combined.

  4. In a separate bowl, add both your sugars and softened butter. With an electric hand mixer or stand mixer, cream the butter and sugar until combined.

  5. Add the creamed butter mixture to the dry mixture. Add in the vanilla and flax egg and mix until combined.

  6. Fold in your chocolate chips. (I like to chop some so there is a variety of chocolate sizes throughout!)

  7. Transfer batter into the lined pan and top with more chocolate if you desire. Bake for 17-20 minutes, until edges are browning.

  8. Remove from pan and allow to completely cool before slicing.

The ooey-gooey chocolate from all the different sized chocolate pieces to the chewy texture from brown sugar made these absolute perfection. I would recommend using an 8x8 pan, as mine was slightly larger and it made thinner blondies, not necessarily bad but I love a thicker bite.


All in all, incredible blondies and vegan friendly of course! Super easy to whip together for a girls night treat or cozy solo night in. Perhaps the perfect Valentine's Day weekend sweet treat!
