You may know I have talked about having a ridiculously expensive bottle of cardamom in my kitchen due to a last minute Thanksgiving ingredient mishap. So when I get the chance, I incorporate it into my recipes.
I made this for Easter dessert! This year there were no kids so it was perfect to make something a little elevated (but still so easy). We needed something easy to serve and a little refreshing. The cardamom adds a really nice subtle spiced flavor. The crumb is really moist and light. In my opinion, it is a perfect spring/summer dessert!
INGREDIENTS
(makes two 8x8 square pans)
1 ¾ cup Oat Milk
1 ½ tbs. Lemon Juice
3 ¼ cup All-Purpose Flour
2 ¼ cup Granulated Sugar
2 ¼ tsp. Baking Powder
1 ½ tsp. Baking Soda
1 ½ tsp. Cardamom
¾ tsp. Salt
1 cup Vegan Yogurt
3/4 cup Olive Oil
1 tbs. Vanilla Paste
¾ tsp. Vanilla Extract
INSTRUCTIONS
Preheat oven to 350 degrees F and grease and line your pan(s).
In a small bowl, begin by mixing the oat milk and lemon juice to make "buttermilk". Set aside while mixing other ingredients.
In a large bowl, whisk together the dry ingredients: flour, granulated, baking powder, baking soda, cardamom, and salt.
Add the wet ingredients: yogurt, olive oil, vanilla paste, and vanilla extract.
Bake for 30-35 minutes or until golden brown and a toothpick comes out clean.
Let completely cool, frost and serve!

I used my Honey Cream Cheese Frosting recipe for the top! It is not vegan but you can absolutely make it vegan by using vegan cream cheese.
I drizzled honey over my frosting and some chopped pecans.
I served by slicing into squares (like you would brownies)!
